#HOWICOOK Recipe - Filet of Beef with Garlic Mashed Potatoes and Lemon Grilled Asparagus

FILET OF BEEF WITH GARLIC MASHED

POTATOES AND LEMON GRILLED ASPARAGUS

Serves 2
Prep Time: 15 Minutes
Cook Time: 25 Minutes

Horseradish Cream Sauce: (Non-Dairy)
3-4 tablespoons fresh grated horseradish
2 lemons, tested and juiced (reserve zest for asparagus)
1 cup mayonnaise
S&P to taste

Mashed Potatoes:
1/2 lb. yukon gold potatoes, quartered
1 tbsp. cooking fat (bacon, olive oil, coconut oil)
2 cloves garlic
1/4 cup coconut milk
2 tbsp. ghee or clarified butter
S&P to taste

Beef:
3/4-1 lb beef tenderloin
S&P to taste

Asparagus:

1/2 bunch asparagus, ends cut
S&P to taste

 

STEP #1

Mix together all ingredients for horseradish sauce and chill in refrigerator or quickly in freezer.

Preheat grill (or grill pan) to 500 degrees (or med-high)

 

STEP #2

In a pot of cold water, add potatoes and a pinch of salt. Cover and cook on med-high until boiling. Then remove cover, reduce heat, and cook until fork tender (10-15 min) Drain and hold hot.

Meanwhile, over medium heat, coat a medium frying pan with 1 tbsp cooking fat. Quickly saute garlic until aromatic and add coconut milk and butter. Season with S&P and add to drained potatoes. Mash with a whisk or potato masher.

 

STEP #3

Season and grill-mark beef. Finish in 325-350 degree oven to internal temperature of 135-140. Let rest for 5 minutes.

While finishing beef in oven, grill asparagus. Season with S&P and top with lemon zest.
