#HOWICOOK Recipe - Herb Potatoes

HOW I COOK - A RECIPE SERIES WITH CHEF RICHARD BRADFORD #HOWICOOK

HERB POTATOES

Serves 2
Prep Time: 10 min
Cook Time: 25 min

3 medium potatoes cut to 1 inch dice
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon pepper
1 sprig of thyme
1 sprig of oregano
1 sprig rosemary leaves

 

STEP #1

Preheat the oven to 425 degrees. In a mixing bowl, toss diced potatoes with olive oil and fresh herbs. Pour out on a lined baking pan. Season evenly with salt and pepper.

STEP #2

Roast in oven until golden brown for 20-25 minutes. Remove from oven and let cool for 5-10 minutes. Serve warm or room temp.

 

STEP #3

Adjust seasoning as needed with S&P. Plate and enjoy!
