#HOWICOOK Recipe - Crock Pot Pork Roast

BREAKFAST SCRAMBLE

Serves 4
Prep Time: 15 min
Cook Time: 7-8 hours

3.5 lbs. pork roast (Boston butt, shoulder)
2 teaspoons salt
1 teaspoon paprika
1 teaspoon mustard
1 tablespoon dry oregano
1 lemon, juiced
1/2 onion, cut into 1 inch pieces
3 carrots, cut into 2 inch pieces
4 cloves garlic
2 cups sweet potatoes, peeled and large diced
3 sprigs thyme
2 cups chicken broth

 

STEP #1

Score pork roast on both sides with a knife about 1 inch apart in a cross-hatch pattern. In a pre-heated large frying pan or skillet, sear each side.

STEP #2

In a large bowl, (big enough to hold roast) add salt, paprika, mustard, oregano, and lemon juice. Mix well to form a marinade and coat seared pork evenly.

STEP #3

Add marinated pork to slow cooker along with thyme, garlic, chilis (if using) and chicken broth. Set slow cooker to low heat. Cook for 7-8 hours.

STEP #4

Roast should be fork tender. Remove and cover with foil. (Discard thyme branch) Blend broth and vegetables to thicken. Serve warm.
