RECIPE: Tomato Sauce - Paleo Friendly & Whole30 Approved

 

Tomato Sauce

PREP TIME: 15 Minutes
COOK TIME: 1 hour
TOTAL TIME: 1 hour 15 minutes
YIELD: About 3 cups
INGREDIENTS:
 
1 tablespoon cooking fat
1 onion, finely chopped
2 celery stalks, finely chopped
1 carrot, peeled and finely chopped
2 cloves garlic, minced
1 can (28 ounces) of crushed tomatoes or substitute with about 6 fresh tomatoes
1 teaspoon fresh thyme
1 teaspoon fresh oregano
1 bay leaf
1 teaspoon salt
1 teaspoon black pepper
DIRECTIONS:
 
STEP #1
HEAT the cooking fat in a large pot over medium heat. Once heated, add onion, celery, and carrot, then cook, stirring until onion becomes translucent which should be about 10-12 minutes. Add garlic and stir until aromatic, about 1 minute. Add tomatoes, thyme, oregano, bay leaf, salt, and pepper.
STEP #2
REDUCE the heat to a simmer, cover, and cook over low heat, stirring every 10 minutes, until the sauce is thick and smooth, about 1 hour. Discard the bay leaf.
STEP #3
STORE in the refrigerator for about 5 to 7 days.

This states it yields about 3 cups, but how many servings is that? Is a serving a 1/2 cup or 1 cup? Also, can you answer this about the Whole30 Salad dressing recipes in the book. I don’t want to be eating too big of a serving. Thanks!

Hey Julie,

For this recipe and many that we post, you can add your cooking fat of choice (olive oil, coconut oil, lard, bacon fat). Just note that if you are doing the Whole30 or paleo diet that you will ant to make sure that the cooking fat you use is compliant.
